Is there a show/hide block for lists? How do I find it, and if not,  why?

I doubt it. They're professional programmers who spent years on this, they wouldn't just forget one of the most vital blocks.

You can just use a white/background-colored sprite which is the same size and in the same place as the lists, and use the show/hide blocks to show/hide the sprites and hide/show the lists.

I slightly disagree. Lists first came out in Scratch 1.3, and since Scratch 1.3 didn't have much difference to 1.2, they could have just forgot because of the small amount of changes to make.
