I know someone is going to say 15MB, but I don't want to upload it, I just want it offline. How much data can it hold in offline? Is it limitless?

Theoretically, infinity. Squeak would eventually run out of memory though. How long it takes for this to happen varies for every computer.

Depends on the computer really, but Scratch.mit.edu will only hold 10MB per project.

Well, when you load up a program it will take it all from the hard-drive and store it in RAM so it can be accessed much quicker by the processor and graphics card, so technically it's limited to your RAM, although other programs and the OS itself will use some up too.
