how do people have Colored words in their signitures?

Just use the [color] tags.
Like this:

Which produces:

produces Coloured text goes here. Just change the "#ABCDEF" bit to the hex value of the colour you want.

And none of the letters is greater than F
meaning no GHIJKLMNOPQRSTUVWXYZ in the color.
The color uses hexadecimal (base-16) numbering
the first two are red, then green, then blue
