Hi! Welcome to Scratch!
First, to upload a project, click on "Share" in the Scratch program, then when the menu comes down click on "Share this project online."
Then, type in your username, password, title of the project, and additional stuff like the project notes and tags (You don't have to), then click "OK."
Second, for the coloring contests on Scratch, you have to download the project then color it in when you have it on your computer. You can use the Scratch paint editor to color it in, or another paint program like MS Paint or GIMP. Then, you upload it again to the website.
Finally, sometimes people make animations on Scratch as well as games, since Scratch isn't just about games. It can be about anything, really. So the projects you see where things are just moving and talking are really animations, or just a simple game.

Project-A game/animation that you see on Scratch (I can't explain it any better)
Animation-A display of frames/pictures put together to show movement. Example: Cartoons are a type of animation
Tag-Something you add to a Scratch project that describes it and makes it easier to find when you search for it.
