It has an answer: A lie.

Because look:

"Everything I say is a lie"

If that's a lie then not everything he says is a lie.

It's the second because let's look at this in real life.

I have lied in my life, but I don't always lie. If I said "Everything I say is a lie" I would actually be lying. That's a lie, yet I have lied in my life.

This riddle seems to have an answer, the way I see it. If he's lying, then even though his statement was, "Everything I say is a lie", it wouldn't have to be opposite, like, "Everything I say is true." It could just mean that sometimes what he says is a lie, and sometimes it's true.

okay so in this riddle you are in front of a knight and a demon
knights always tell the truth while demons always lie
you are only allowed to ask them a yes or no question
how do you find out which is the knight and which is the demon?

You can only ask one of them one question, you cannot ask the other anything.  What do you ask to go through the correct door?

The way you told it you could just ask them something obvious like "is the sky blue" and you would have your answer.
