Well if i go with a theocracy, that would make more sense because it allows room for aristocracy and the knights can be crusaders. But a democracy would make an interesting twist, especially if the had to vote for their monarch instead of crowning them.

I think the democracy seems a little out of place in a medieval setting - I mean, how would they vote? They mostly can't actually write. I would prefer theocracy.
