Well, I'm now trying to catch the griefers. Rather I'm griefing others, to see how well they're protected.

That's the point. You install plugins, and see if they work by having me try to grief.

They do work. Hundreds of servers use them.

Griefers are bad because they're unplanned, if someone says "I'm going to come on your server and grief at 10pm GMT" then you will be prepared.
