Re: Scratch Chefs: Share Recipes and Learn About Cooking! Take Two!

I am nearly done the favorites. For now, you can only have five favorites, but that will change.

Meanwhile, read my new recipe:

Creamy Potato and Ham Bake
Meal Type: Main Dish
Difficulty:Medium

Ingredients:
-10-20 Yukon Gold Potatoes
-1/4 Cup of Flour
-1/2 Cup of Butter
-1/4 Cup of Milk
-1/2 Cup of Grated Cheddar Cheese
-Ham (Leftovers is fine)

Steps:
1. Peel the potatoes. Slice the each potato into half inch slices so all the potatoes are in round pieces. Brown these potatoes in a pan with some vegetable oil (only for a minute or so) and then take out and lay on a plate.

2. Get a medium-large casserole dish and arrange half of the potatoes in the bottom so they are snug. Then, on top of the first layer, add another layer. Continue until all your potatoes are gone. (2-3 layers recommended, no higher).

3. Cut up your butter and melt it in a pan. When the butter begins to bubble, gradually start to add the flour, stirring constantly. Remove all lumps so it is smooth. This will make our Roux, which is the base for our cream sauce. Quickly add your cheese, still stirring. Add the milk to loosen it up (you can add more or less depending on how thick you want the sauce, I wouldn't go any more than 1/2 cup).

4. Pour the sauce into your casserole dish onto the potatoes (make sure you get sauce on them all. If there does not look like enough sauce, feel free to make more the same way as before). Set that aside.

5. Get your ham. Cut into two centimeter squares. You should have a cup or two of these, but not too much more. Sprinkles over the potatoes into the sauce.

6. Put this in the oven. Cook on a low or medium heat in the oven until sauce is bubbly and the potatoes are cooked through. Warning: this may take a while.

As soon as that is done everyone's recipes will be added.
For now I will just critique them:

Cheddargirl, I think that seems more fitting as a Soup dish. Sounds very delicious though, reminds me of Korean Bibimbap.

I guess it could; The reason why I chose main dish is that most ramen dishes (and most other Asian noodles soups) are rather large and can usually count as the main dish of a meal (most soup dishes are much smaller in portion). However, if you cut the ramen packet in half and use one cup of water instead of the recommended two, I think that would count better as a soup dish in terms of portion size.  wink

Point taken, I was just thinking more literal- it is a soup, even if you do eat it as a main course. I suppose either could work though  smile

Re: Scratch Chefs: Share Recipes and Learn About Cooking! Take Two!

Type: Entree

Meal : Fish and Chips

For the fries:
1 gallon safflower oil
4 large Russet potatoes
Kosher salt
For the batter:
2 cups flour
1 tablespoon baking powder
1 teaspoon kosher salt
1/4 teaspoon cayenne pepper
Dash Old Bay Seasoning
1 1/2 pounds firm-fleshed whitefish (tilapia, pollock, cod), cut into 1-ounce strips
Cornstarch, for dredging

Directions
Heat oven to 200 degrees F.

Heat the safflower oil in a 5-quart Dutch oven (my house's oven  tongue ) over high heat until it reaches 320 degrees.

slice the potatoes with the skin on. Place in a large bowl with cold water.

In a bowl, whisk together the flour, baking powder, salt, cayenne pepper, and Old Bay seasoning.  Refrigerate for 15 minutes.

Drain potatoes thoroughly, get rid of any excess water. When oil gets hot, submerge the potatoes in the oil. fry for 2 to 3 minutes until they are pale and floppy. Remove from oil, drain, and let it cool.

Increase the temperature of the oil a bit. Re-immerse fries and cook until crisp and golden brown, about 2 to 3 minutes. Remove and drain on rack. Season with kosher salt while hot and keep in the oven.

Allow oil to return to the original degree. Lightly dredge fish strips in cornstarch.  dip the fish into batter and immerse into hot oil. When the batter is set, turn the pieces of fish over and cook until golden brown, about 2 minutes. Drain the fish on the roasting rack. Serve with malt vinegar.

I invented this originally... But my mom fixed all the imbalances and all that stuff.

Buuut the meal type would be Fish/Seafood...

Personally, for Fish and Chips, I like tilapia, but I usually use codfish.

Re: Scratch Chefs: Share Recipes and Learn About Cooking! Take Two!

For the sake of BBQ week, I'm uploading my favorite burger!

Title: The Summer Breeze

Meal Type: Meat/Poultry

Difficulty: Easy

Author: NeilWest

Ingredients:
A burger bun.
A quarter of a pounds worth of mince meat.
A slice of mozzarella.
3 slices of cucumber.
A leaf of lettuce.
Optional:
Mayonnaise
Tomato Ketchup
BBQ Sauce.
A substitute to mozzarella cheese.

Steps:
Get the mince and mold it into a patty.
Now tear it in half and put the mozzarella on top of one of the slices.
Then put the other slice over and push it down.
Cook on a barbecue until the burger is thoroughly cooked.
Leave the burger to cool for 5 minutes.
Get the bun, and add the burger.
Then add the salad.
Anything optional you want to add, add now.
Then finish the burger off and it should be done!

Re: Scratch Chefs: Share Recipes and Learn About Cooking! Take Two!

This recipe is from the manga Yakitate!! Japan and is not mine, however, it's pretty nice. According to the manga itself, the recipe is from Murakami Akikio's 30 Second Microwave Cooking. Also, according to the thing I got it from, the bread is a little dense, but it tastes good.

wrote:

Title: Ja-Pan 3 (Bread made in Microwave)

Meal Type: Bread

Difficulty: Beginner, but MAKE SURE TO HAVE ADULT SUPERVISION WITH THE OVEN.

Author:
Says so up there

Ingredients:
100g bread flour
75 ml milk
8g salt-free butter
1g salt
4g dry yeast
9g sugar
Black sesame (as much as you like)
Flour to keep from sticking (as much as needed)

Steps:
Add butter and milk to a microwave-safe bowl, and microwave on high (600 watts) for 30 seconds. If the milk gets too hot, let it cool.

Mix the butter and milk. Then add the salt, sugar, flour (gradually), and yeast. Don't knead the dough. Just mix it.

Cover with parchment paper, and microwave on low (150-200 watts) for 30 seconds.

Move dough to cutting board and divide into four parts. Shape each part into a ball, and cover each quarter with parchment paper and a wet cloth. Leave it there for 10 minutes at room temperature.

Release the gas and roll it back into one ball. Back in the microwave on low again for another 30 seconds.

Press black sesame into the surface of the bread. Cover it again with parchment paper and wet cloth. Leave it for another 10 minutes, and set the oven to 200 degrees Celsius. (not from the website: this is 392 degrees Fahrenheit, about 400 degrees)

Bake 10 minutes.

[from http://bigstupidjerkface.blogspot.com/2005/08/japan-3-manga-version.html, I'm not linking in case of bad words, though]

Tags:
-'Contains Nuts': It may have nuts in the ingredients themselves, but there are no nuts actually added to the dish, unless you count black sesame.
