Try checking out the Sample Projects that came bundled when you downloaded Scratch! These are really helpful if you want to check out what some of the scripts that are used in games.
Of course, if you have an idea for a specific project, you can always get some help here in the forums.

Fuz is right;; The example projects can really be helpful. Try dissecting their scripts and whatnot
The blocks tend to be quite straightforward with what they do, but I believe you can right click them and select something along the lines of "help" to find out what they do
Everything has to start with one of the Control blocks;; probably the "When green flag clicked" one. The motion ones make motion (Spins, flips, glides, changing location) happen, looks change how your sprites/background look, and so on
Really do take a look at the examples, though;; And if you see anything that could be helpful on the site you can download it and look at its scripts
You can probably find a lot of tutorials around here somewhere as well
