Once I got a response in a few hours (when MIT was awake); another time I sent an e-mail when they were asleep and when I woke up the next day there was a response

Anywhere between a couple of hours and maybe a day, really.

I'd say the average wait time is about 1 1/2 days.

Alright. At least I know what I'm expecting now.

Oh, okay. Also, will they respond if you reply to the email? Or do you have to use the contact link again?

Yes, they will. Sometimes I even email them directly at help@scratch.mit.edu, instead of using their form.

I don't think it really makes much of a difference. I've only used the form once or twice, way back when, though.
