Flavor recommendations:
::Linux::
-On the desktop:
1st place: Ubuntu, great on the desktop, very easy to use.
2nd place: openSUSE, great if you want to impress your friends.

-On the server:
1st place: Debian, It's OK if you are a lazy swine! JK, that's a good thing.
2nd place: Ubuntu Server, smooth with everything set up like debian, but too much saturated fat.
3rd place: Gentoo, Comment compiling.......... done. One of the most updated repositories in town.
-On the watch:
ARCH Linux, modern CRUX?
::Unix & BSD::
-On the desktop:

Just installed Ubuntu, and it's AMAZING!

I use Ubuntu for any local stuff where I need to use an actual operating system (Windows has unfamiliar APIs, and Apple sort of messed up the development tools). I use CentOS for my server.

Cool, have you ever used Gentoo? (installing this will prove you a worthy Linux-er )
It's fine if you have a high-power machine, and are VERY experienced, and have some time on your hands.

OSX is Unix based. Linux is the open-source reply to Unix.

I think CentOS is better for the server. While the support Ubuntu Server gets is really good, it's still quite heavy... If you need a small, local server, why turn on the cloud features?

depends, i normally use KDE as a dev environment but GNOME for graphics/media stuff or "minimal sever selection" for text-only servers
i've used Solaris on a SPARC-arc before, an original machine with sun microsystems written on it
EDIT: misspelling of SPARC
