The trick is to have a blank "say" block that fires when your mouse *leaves* the sprite, otherwise the thing that it says will stay there.

say: *blank*

Great idea, Graham! A lot of people may have the problem relyt12101 had. If you want that for a game like "Tag", I guess you could use that if you are trying to catch someone. They might say, "You can't catch me!" when the mouse is not touching the sprite, and "You tagged me!" when the mouse IS touching the sprite.
