As for the blocks,
Sponges do ABSOUTELY NOTHING, can only be found in creative, and do not occur naturally.
Redstone is like a power generator. Place the dust on the ground and connect it up to something, say, a sticky piston (more on that later). Then connect it to a lever and turn it on!
I don't know enough about it to give a detailed description, so look it up.
Pistons can push things if powered by redstone, and sticky pistons can push and pull them.

Alright, correct me if I'm wrong: I enchanted my helmet with Aqua Affinity, and tested out some stuff. (I have EnchantView mod.) So, it turns out Aqua Affinity makes you mine faster in water?

A plugin (I think Worldguard) makes them drain water.

Pumpkins and melons need to be able to be moved by pistons.
I built a mechanism to, overtime, push the melons/pumpkins out so that instead of one patch only producing one melon and only one until harvested, it could create how ever many it can in the span of time.
I decided to turn into a test, in which ended up as a successful self-regenerating cobblestone floor. It takes a while though

I don't want to break them. The system is meant for moving melons/pumpkins so that they can be more effective in their farming over time. Items don't last long before degenerating.

EDIT: Found a fast, compact, auto wheat farm on the wiki that i hadn't noticed before.
