What files types can Scratch open for sprites and sounds? Sorry if this has been asked a lot but I couldn't find it in a search or help stuff.

Well it can't open .mx4 (like iTunes songs), but I'm not sure about anything else. When Scratch opens a sound, it converts it to MIDI.Sprites/backgrounds, basically any common image filetype, .png, .gif, etc.
