when I delete a sprite the mouse gets stuck on the scissor icon and i cant delete the sprite

You may have the shift key pressed. Holding down the shift key allows you to click several times with the scissors to delete several sprites.
To get out of scissors (delete) mode, just click on the arrow tool in the tool bar above the stage.
