The "extras" button was in Scratch 1.3, while the current version is 1.4. I think all the functions tat could be accessed with the extras button can be found somewhere in 1.4. Just ask where and hopefully someone will know.

Hello barnesa, welcome to Scratch!
The features that were usually under the Extras button in Scratch 1.3 (such as single-stepping and sound compression) are now located in the Edit section on the menu bar in Scratch 1.4. 
There are some slight differences between versions 1.3 and 1.4 of Scratch. Just in case, you may find this reference guide to 1.4 helpful (http://info.scratch.mit.edu/Support/Reference_Guide_1.4).
