In 2.0, a project link looks like
http://scratch.mit.edu/projects/10068446/
while in 1.x a project link looks like
http://scratch.mit.edu/projects/Hyperbola/3204743/
with the extra username.
Similarly, a forum topic in 2.0 looks like
http://scratch.mit.edu/discuss/topic/3110/
while a 1.x topic looks like
http://scratch.mit.edu/forums/viewtopic.php?id=32532
which is quite a large change.
Likewise for things like users, galleries/studios, etc.
Considering all the links that are posted in the forums and projects (and other websites), will the old links redirect to the new ones?

For projects, yes, old links will redirect to new ones.
For the forums, remember that they won't transfer. Because of this, they don't need to worry about converting URLs.

Oh yeah, forums aren't transferred. But will the old forums links still work (and point to these threads)?
