I have a bunch of techniques that work in vanilla Scratch that can be accessed with minor 'hacking'.
Storing colors in variables.
Get ascii of any character in the range of 0 - 255 uses costume 'lookup tables'.
Cloning (only work in flash)
Inserting variable into key pressed block.
Variable watcher without orange box (online works offline)
Multiple watchers for the same variable
Dynamically controlled list blocks.
Stretch blocks (only works offline)
...and many others lying around. Discuss/post your own.

I love messing with Scratch
If I can't put a variable in a dropdown, I change it to ChoiceOrExpressionArgMorph

I've done the key press thing before. You may also want to put in nXIII's moving variable "hack".

That doesn't change functionality of the project (unless you mean watchers.)
Though having a green list in your thumbnail will get you lots of views.
